Apple Cider Pork Roast

Preheat the oven to 350°F (175°C).
Season the Pork:
Rub the pork loin roast with olive oil, salt, pepper, garlic powder, onion powder, thyme, rosemary, and Dijon mustard. Make sure it’s evenly coated.
Prepare the Apple Cider Glaze:
In a small saucepan, combine the apple cider, apple cider vinegar, brown sugar, butter, cinnamon, and nutmeg. Bring to a simmer over medium heat. Stir occasionally and let it reduce by half (about 10-12 minutes). For a thicker glaze, mix the cornstarch with a little water and add it to the sauce, stirring until it thickens.
Sear the Pork:
Heat a large oven-safe skillet over medium-high heat. Sear the pork roast on all sides for about 3-4 minutes until it’s golden brown. Remove the pork and set it aside.
Roast the Pork:
Place the pork roast in the skillet (or transfer to a roasting pan if needed). Brush with the apple cider glaze, then transfer to the preheated oven. Roast for 45-60 minutes, or until the internal temperature reaches 145°F (63°C), brushing with the glaze every 15 minutes.
Prepare the Apples:
While the pork roasts, melt butter in a separate skillet over medium heat. Add the sliced apples, brown sugar, and cinnamon. Cook for 5-7 minutes, stirring occasionally until the apples are soft and caramelized.
Combine and Serve:
When the pork is done, remove it from the oven and let it rest for 5-10 minutes. Slice the pork and arrange it on a platter. Serve with the caramelized apples and drizzle the remaining apple cider glaze over the top.

Serve with roasted vegetables like carrots, potatoes, or Brussels sprouts.
